But have you tried seafood pho? If not, you’re missing out on a real treat. In this blog post, I’ll share with you how to make the perfect bowl of seafood pho soup.

Before we get started on the recipe, let’s quickly review what pho is. Pho (pronounced “fuh”) is a Vietnamese soup made with beef or chicken broth, rice noodles, herbs like cilantro and basil, and meat – typically thin slices of beef or chicken. However, seafood can also be used as a protein component for this amazing soup.

Ingredients you will need:

1 pound shrimp
1 lb squid
4 garlic cloves
2 tablespoons ginger finely chopped
1 onion chunkily sliced into 3-4 pieces
3 whole star aniseeds (less if sensitive)
2 cinnamon sticks (3 inches long)

10 black peppercorns
8 cups good quality chicken stock/ fish stock/ veggie stock

Wash squid rings thoroughly under running water and thinly slice half their bodies into ring-shaped pieces while quartering any thicker pieces remaining. Set aside.

In a large pot over medium heat—preferably big enough to hold everything comfortably—you will toast aromatics including garlic and onions until browned well. Then add ginger chucks along with ground spices like star anise seeds ,cinnamon sticks,cloves and three teaspoons of salt before stir frying again briefly until fragrant.

Separately in another pot on high heat, blanche or soften rice noodles by soaking them in boiling hot water until tender yet still slightly chewy so follow package instructions as guidelines. Serve them either plain or tossed in sesame oil or drizzled over soy sauce—together with bean sprouts ,lime wedges, sliced chilli peppers (for extra heat), coriander leaves,and some scallions generously sprinkled atop each bowl.
